Among the spicy chicken variants, the chicken sukka prepared in South Indian cuisine is the most popular. In general, Chicken Sukka has its roots in Mangalore. However, several modifications are made according to the nativity. The word “sukka” means “dry” in Hindi; based on the dry texture, this dish is named Chicken Sukka. Chicken Sukka is also referred to as Kori Sukka or Kori Ajadina.

- 1The initial step in Chicken Sukka preparation involves marinating the chicken in a mixing bowl with Salt, Turmeric Powder, and Coriander Powder.
- 2Mix in the Chilli powder, Coriander leaves, Curry leaves, and Ginger Garlic Paste.
- 3Splash a small amount of water and mix the contents. Marinate the chicken for approximately 30 minutes.
- 4Heat oil in a pan, add whole garam masalas like Cinnamon sticks, Bay leaf, Cardamom, and Fennel seeds, splutter, and then add Garlic cloves.
- 5To this tempering, add shallots. Next, add Curry Leaves, and split Red Chillies, and sauté for 2 minutes.
- 6Post 2 minutes, add Ginger Garlic Paste and mix well with the oil. After mixing, add roughly chopped Tomatoes, Turmeric Powder, Salt, marinated Chicken and mix well.
- 7Splash required amount of water and cook the chicken. Finely chopped Coriander leaves are added to the mixture and cooked until it thickens and turns dry.
- 8Sprinkle with a small amount of pepper powder, then add the coriander and curry leaves and mix thoroughly.
- 9The delicious, super-spicy Chicken Sukka is now ready to be served.
