Coconut Malai Burfi

Sweets and desserts are the ones that rule a menu. Possessing a wide array of sweets and desserts, Indian sweets are famous all around the world. The most popular traditional Indian sweets are Laddu, Kaju katli, Peda, Barfi and Jalebi.

Barfi is a delicious, milk-based sweet that is enjoyed immensely all across the globe. The name Barfi is said to originate from a Persian term that stands for snow. A variety of barfi is prepared, which includes Kaaju barfi, Besan barfi, Pista barfi, coconut barfi, and many more. These barfi’s are mostly garnished with a soft, edible silver leaf called Vark. Apart from this silver leaf, barfi can be garnished with a choice of fruits, nuts, and other spices too.

Ingredients:
  • 1 Litre
    Full Fat Milk
  • 100 grams
    Desiccated Coconut
  • 100 grams
    Sugar
  • 1 Tsp
    Cardamom Powder
  • 6 to 8 Tbsp
    Ghee
  • 2 Tsp
    Vinegar
Directions:

    Pour ghee into a pan and let it melt. After it has melted, add the desiccated coconut and cook over low heat.

    The full-fat milk needs to be boiled next. Bring the milk to a full boil and let it thicken. The milk takes around one and a half hours to thicken.

    Pour the vinegar into the milk in batches and stir constantly until it forms minute curdles.

    Add sugar to the milk mixture and let it to get caramelized. The texture of the caramelized mixture resembles that of Milk Khoa.

    The roasted coconut is now added to the milk mixture and mixed gently. Add Cardamom Powder, mix and cook the mixture for 5 minutes. Post 5 minutes, add ghee in batches.

    Grease a large tray with ghee. Spread the prepared mixture evenly across the tray. Leave the set up undisturbed for 1 hour.

    The ghee tightens the texture of the Barfi when it is let to rest. It is therefore best to put the mixture over the heat and cut it into pieces.

    For garnishing, place a silver leaf on the top surface and then cut into pieces.
