Roadside Chicken Fried Rice

Indo-Chinese cuisine is the hotspot and the most preferred choice for many. It includes Chinese fried rice, chowmein, noodles, and chili variants such as chili chicken, chili lamb, or chili fish.In Chef Deena’s Kitchen, the recipe for street-style chicken fried rice is shared, especially for those who always crave spicy food. The procedure remains simple: chicken is marinated with spices, eggs, and fried. The same is added to the mixture prepared with eggs and blended well. Finally, boiled basmati rice is added and tossed over a high flame.

- 3 TbspChopped Onion
- 1 1/4 TbspGinger Garlic Paste
- 1 1/2 TspChilli Powder
- 1 1/4 TspSoya Sauce
- 1 TbspTomato Ketchup
- Few DropsVinegar
- A PinchWhite Pepper
- As RequiredCoriander Leaves

- 1The first step is to marinate the chicken in Salt, Chili powder, ginger garlic paste, 1 egg, and a small amount of soy sauce.
- 2Add instructed amount of Corn flour, splash little amount of water and mix all the added ingredients thoroughly with the chicken. Check for the seasonings and allow it to rest undisturbed for 30 minutes. After 30 minutes, drop the Chicken into heated Oil and fry.
- 3Strain the fried chicken from Oil, transfer it to a plate and then chop them into small pieces.
- 4Heat oil in a pan, add chopped onions, sauté for 2 seconds, then add ginger garlic paste and beaten eggs.
- 5When the egg has reached 85% cookedness, season with Salt, Chili powder, and finely chopped Coriander leaves.
- 6Add the chopped chicken to the mixture and toss over high heat, ensuring that all of the ingredients are well blended. Next step is to add boiled basmathi rice, coriander leaves, 1 tablespoon of soya sauce, and tomato sauce to the mixture.
- 7Add vinegar to attain a sharp tangy taste, sprinkle with White Pepper Powder, Coriander leaves and toss all the added ingredients together. To ensure proper rice mixing, place a spoon in the center of the pan and shake it until it is evenly mixed without breaking.
- 8The spicy and delicious chicken rice is now ready.
