Masala Vegetable Rice

- 1First step in this preparation is to boil the vegetables. To the boiling water, add chopped Potatoes, Carrot, Green Peas, Beans in required amount.
- 2Add Salt, Turmeric powder and Green Chilies to the boiling veggies so that the seasonings and flavors intact.
- 3Boil vegetables to 80%, strain, and set aside. Use stock water from boiling to make soup.
- 4Pour Gingelly oil into clay pan and heat, To the heated Oil, add Mustard seeds, Fennel seeds, and allow it to splutter. Then add crushed garlic with skin.
- 5Followed by garlic, add Red Chilies, Curry leaves and again add Green Chilies. In this stage, add finely chopped onion and saute well until they turn translucent and golden brown.
- 6Cook onions to 90%, then add ground Ginger Garlic paste, chopped Tomatoes, Turmeric Powder, and Salt to the mixture.
- 7Now, add Chilli Powder, Coriander Powder to the onion-tomato masala and cook well for 2 minutes. Pour in required amount of water to the prepared the masala (In this stage, instead of water prefer adding the vegetable stock) and cook the mixture by covering it using a lid.
- 8Cook the masala for 5 minutes, then add the boiled vegetables and cook again to achieve the desired texture.
- 9Add boiled moong dal and Coriander leaves to the mixture, mix, and cook until it thickens. Transfer the masala to another bowl.
- 10The next step involves layering the prepared masala and rice, starting with a small amount of masala, then spreading the rice on top, followed by the remaining masala.
- 11Place the set up in Dum for 5 minutes, then mix and serve.
- 12The scrumptious, flavorful Masala Veg Rice is now ready to serve.
