Lemon rice is one such variety of rice that is capable of taking your lunch or dinner to the next level.  It is the perfect pick during times when you are already bored and tired of tedious recipes.  The procedure involves preparing a distinct tempering with basic ingredients that are readily available in the kitchen, squeezing lemon juice, adding boiled rice to the tempering, and mixing it thoroughly. The key factor to keep in mind throughout this preparation is to turn off the stove immediately after adding turmeric powder. Secondly, squeeze the juice from the lemon only after the temperature of the tempering is reduced.

Ingredients:
  • 1 Cup
    Boiled Rice
  • 2 No's
    Lemon
  • 1 1/4 Tbsp
    Gram Dal
  • 1 1/4 Tbsp
    Urad Dal
  • 2 Tbsp
    Roasted Peanuts
  • As Required
    Cashewnut
  • 10 No's
    Red Chili
  • 1 1/4 Tbsp
    Chopped Ginger
  • 2 No's
    Green Chilli
  • For Tempering
    Cumin Seeds
  • As Required
    Curry Leaves
  • As Required
    Coriander Leaves
  • 1/4 Tsp
    Turmeric powder
  • 1/2 Tsp
    Asafoetida
  • 1/4 Tsp
    Mustard Seeds
  • To Taste
    Salt
  • For Cooking
    Gingelly Oil
Directions:

    Heat Gingelly oil in a pan, then add the Mustard seeds, Cumin seeds, Urad Dal, Gram Dal, Peanuts, Cashew nuts, and Red chillies.

    Add Ginger, Curry leaves, and Green chilies to the tempering and sauté on low flame until golden brown.

    Add Asafoetida Powder to the tempering mixture, followed by Turmeric Powder, and turn off the flame. Pour water into the mixture to reduce its temperature.

    Squeeze lemon juice into the mixture, add the necessary amount of salt, and mix thoroughly once the temperature has decreased. After mixing, combine the boiled rice with the mixture.
