Kadai Mushroom Masala

Ingredients:
  • 1 Packet
    Mushroom
  • 3 No's
    Onion
  • 3 No's
    Tomato
  • 1 No
    Capsicum
  • 1/2 Tbsp
    Chopped garlic
  • 1/2 Tbsp
    Chopped Ginger
  • 1/2 Tbsp
    Chopped Green Chilli
  • 1 Tsp
    Coriander Seeds
  • 1/4 Tsp
    Cumin Seeds
  • 1 Tsp
    Pepper (Black)
  • 1/4 Tsp
    Turmeric powder
  • 1 Tsp
    Kashmiri Chilli Powder
  • 1 Tsp
    Coriander Powder
  • 1 Tsp
    Kasuri Methi
  • 40-50 Grams
    Cashewnut
  • 4 to 5 No's
    Red Chili
  • As Required
    Coriander Leaves
  • To Taste
    Salt
  • For Cooking
    Oil
  • 1 Tbsp
    Butter
Directions:

    Heat the oil in a pan, then add the Cumin seeds, Red chilies, chopped Ginger, Garlic, Green chilies and sauté until golden brown.

    Finely chop 2 onions and sauté until translucent. Add chopped Tomatoes, Salt, Turmeric powder, Coriander powder, and Red Chili powder to tempering.

    After adding all of the ingredients, combine well and cook the masala with a small amount of water. The onion and tomatoes must get smashed well, only then the consistency remains ideal for this recipe.

    Stir in the ground cashew nut paste. Pour in 1 glass of water and boil the masala till the raw smell of the cashew nut gets disappeared.

    Combine the cleaned mushrooms with the masala. When the mushrooms are 80% cooked, crush the Kasuri Methi using your palm and add it to the masala.

    Mix in the butter and cook over low heat until the butter and oil separate from the masala.

    To make the Kadai Powder, add the Coriander seeds, Black peppercorns, and Red Chili to a separate pan and roast until they turn aromatic.

    The roasted ingredients need to be crushed partially.

    Melt the butter in a saucepan. To the melted butter, add the diced Capsicum Onion and season with salt and turmeric powder. Toss for 1 minute, then add to the curry.

    Add the tossed ingredients to the masala, followed by the Coriander leaves and crushed Kadai powder, mix well, and serve the Kadai Mushroom gravy.
