Chilli Cauliflower-South Indian Style

 Vegetables are an excellent source of essential nutrients and taste wonderful. When specific spices and other additives are added to the vegetables, they taste exquisite. In Chef Deena’s Kitchen, the Chilli Cauliflower recipe is expanded in South Indian manner.

Cauliflower is a delicate and healthy vegetable with a mild flavor. However, it is capable of absorbing any flavour that is added to it. This Chilli cauliflower recipe is a wonderful twist on the traditional cauliflower pakoda/fry. The spices used to season the cauliflower offersit a distinct Indian flavor.

Ingredients:
  • 1 Full Flower
    Cauliflower
  • 5 to 6 Tsp
    Corn flour
  • 4 to 5 Tbsp
    Tomato Ketchup
  • 2 Tbsp
    Onion
  • 1 No
    Tomato
  • 1 No.
    Capsicum
  • 1/2 Tbsp
    Chopped garlic
  • 1/2 Tbsp
    Chopped Ginger
  • 1/2 Tbsp
    Chopped Green Chilli
  • A Pinch
    Turmeric powder
  • 2 1/2 Tsp
    Chilli Powder
  • 3/4 Tsp
    Coriander Powder
  • 1/4 Tsp
    Cumin Seeds
  • As Required
    Coriander Leaves
  • To Taste
    Salt
  • For Cooking
    Oil
Directions:

    Pour necessary amount of water to a wide vessel and allow it to boil. Drop in the cut Cauliflower florets into the boiling water and season with Salt. Cook the Cauliflower florets up to 10% and then strain them from water and allow it to cool at room temperature.

    Marinate the blanched and cleansed Cauliflower florets in a mixing bowl with Salt, Chili powder, Ginger Garlic Paste, and corn flour.

    Add finely chopped Coriander Leaves, splash water, and mix thoroughly to ensure Corn flour and Cauliflower bind well.

    Drop the marinated cauliflower one at a time into the heated oil and fry until crispy.

    Heat oil in a pan, add cumin seeds, 1 1/2 Tbsp of finely chopped Ginger, Garlic, and Green chilli and saute. Post sauteing the added contents, add 2 Tbsp of Onion and saute for 1 minute and more than that.

    The next step involves adding finely chopped Tomatoes to the mixture, followed by adding slit Green chilies and Chili powder as the tomatoes are cooked.

    Stir in a pinch of Turmeric powder, Coriander powder, Salt, and finely chopped Coriander leaves.

    Cook onion, tomatoes, and powder masalas in low flame with minimal water. In order to render a mild tangy and sweet taste include Tomato Ketchup to the mixture.

    After adding tomato ketchup, add diced capsicums, followed by fried cauliflower. Toss well, then garnish with finely chopped fresh coriander leaves and serve.
