- 1The procedure involves preparing masala by roasting Fennel seeds, Coriander seeds, Curry leaves, and 10-12 Red chillies in a pan.
- 2Transfer the mixture to a plate, let it cool at room temperature, and grind it into a coarse powder.
- 3Coconut, Fennel seeds, Green chillies, and Cashew nuts are ground together to make a fine textured paste.
- 4In a clay pot, heat the oil, then add the Fennel seeds, Whole Garam masalas, Red chili, and Curry leaves, and allow them to splutter.
- 5Add finely chopped Onions and sauté until golden brown. Include Ginger Garlic paste and sauté again.
- 6Sauté the drumsticks, then season with salt and combine. Add tomatoes to the mixture and mix. Followed by tomatoes, add Turmeric Powder and sauté well until the raw smell of the vegetables leave.
- 7Chilli Powder and Coriander Powder are added to the mixture, which is then cooked until mushy.
- 8Pour a small amount of water to cook the vegetables.
- 9When the drumsticks have reached 50% doneness, add the Broad Beans and sauté.
- 10Add the chicken to the mixture and cook it.
- 11Now add the prepared coconut paste and allow it to cook.
- 12If necessary, water can be added at this point; nevertheless, the chicken releases its water content as it cooks. Add chopped coriander leaves, cover the gravy with a lid, and cook for a few minutes.
- 13Finally, add the prepared masala as needed and combine.
- 14Pour in a small amount of coconut oil, mix well, and serve.
- 15The delicious, yummy and authentic Chicken Kuzhambu is now ready.
